Are Carrots a Great Source of Vitamin A? (Myth Busted?)
Vitamin A is one of the essential Fat-Soluble vitamins you need for optimal health. Many will tell you that you can get Vitamin A from Veg, but there is a problem with this advice. The “Vitamin A” found in Veg/Carrots is beta-carotene, which is a precursor of Vitamin A, not actually vitamin A. It is locked away in the fiber of the veg, and thus is difficult to absorb. Once absorbed, it requires several biochemical reactions to actually become real Vitamin A. Much better would be to eat a lower-carb food that is rich in Real Vitamin A. If only we knew what these foods were.
